4.  An Air Cleaning component that cleans the grease, smoke and odor from the air before it is released to the outside.

A typical commercial kitchen fan or blower must do the following:
Your commercial kitchen fan or blower must be powerful enough to adequately direct the emission fumes to your commercial kitchen hood.  To remove all the air and replace is with new air is called an air exchange.   How much air a fan moves is rated in CFM, cubic feet per minute.  Based on the size of your kitchen and how many air exchanges required per hour, you can determine the CFM needed for your fan or blower.  To avoid hazardous low pressure, you need to provide make-up air.  What air goes out must be replaced with fresh air coming in at the same rate.

Below illustrates two typical methods of installing commercial restaurant kitchen emissions cleaning systems.  Most units can be either installed inside the building or outside on the roof.  All units can retro-fit into a standard HVAC system.

The air cleaning unit goes between ducting from the kitchen hood to the exhaust fan. A unit can install in a crawl space or bolted between ceiling rafters.

Weather protective enclosures allow the air cleaning unit to sit outside the building. It installs inline with ducts leading to the exhaust fan.

Indoor - How it Works

  1. Kitchen smoke and grease vapor are pulled up into the hood.
  2. Smoke and grease vapors are pulled up fireproof ducts that lead to the filtration unit inside the building.
  3. Smoke and grease are extracted from the air as it passes through the filters.
  4. Clean air flows out of the filtration unit.
  5. Clean air flows out of the building through the exhaust fan.

Outdoor - How it Works

  1. Kitchen smoke and grease vapor are pulled up into the hood.
  2. Smoke and grease vapors are pulled up fireproof ducts that lead to the filtration unit outside the building.
  3. Smoke and grease are extracted from the air as it passes through the filters.
  4. Clean air flows out of the filtration unit and out through the exhaust fan.
