Your
commercial kitchen fan or blower must be powerful enough to
adequately direct the emission fumes to your commercial
kitchen hood. To remove all the air and
replace is with new air is called an air exchange.
How much air a fan moves is rated in CFM, cubic feet per
minute. Based on the size of your kitchen and how many
air exchanges required per hour, you can determine the CFM
needed for your fan or blower. To avoid hazardous low
pressure, you need to provide make-up air. What air
goes out must be replaced with fresh air coming in at the
same rate.
